Claypot Chicken Stew 沙煲鸡



*in collaboration alongside Dancing Chef (for Hainanese Chicken Rice Paste)

The customer gave us a challenge this time. I was given the Dancing Chef Hainanese Chicken Rice Paste together with Laksa Paste but was asked non to gear upwards chicken rice together with laksa. The challenge was to exercise other dishes using the pastes. Since it has been raining these few days, I idea it would travel timely to gear upwards a pot of comforting together with warming claypot chicken stew using the Hainanese Chicken Rice Paste. This Claypot Chicken Stew 沙煲鸡 is a real easy-to-cook dish. Just add together whatever vegetables together with ingredients of your alternative together with y'all could whip upwards a balanced one-pot dish to larn alongside steamed rice.

On its own, the Dancing Chef pastes are genuinely flavourful plenty to travel used without other spices together with aromatics. For this Claypot Chicken Stew 沙煲鸡, I added a handful of aromatics (such equally ginger, garlic, lemon grass together with onions) for texture together with layering purpose.

Ingredients (enough for iv pax alongside rice) :
  • 3 large pieces of fresh boneless chicken thigh meat (washed & drained)(chopped to chunks)
  • 1 package Dancing Chef Hainanese Chicken Rice Paste (100 gm)
  • 12 pcs dried mushrooms (pre-soaked)
  • 1 carrot (thinly sliced)
  • 200-250 gm napa cabbage (soaked together with chopped to smaller pieces)
  • 1 pc lemon grass (pressed together with cutting into iv pcs)
  • 1 pc medium sized onion (julienned)
  • 4 cloves garlic (thinly sliced)
  • 1 pc cherry-red chili (sliced)
  • 1 stem coriander for garnishing (chopped)
  • 1/2 tsp tabular array salt (chicken marinade)
  • 1/2 tsp sesame stone oil (chicken marinade)
  • 1 tbsp saccharide (or to taste)
  • 1 tbsp cooking oil
  • 500 ml water

(tsp = teaspoon; tbsp = tablespoon) 

Method :
  1. Marinade chicken pieces alongside tabular array salt together with sesame oil. Set aside for xxx minutes.
  2. Heat cooking stone oil inward frying pan. Pan fry/brown chicken pieces till well-nigh 60% cooked. 
  3. Remove chicken pieces from frying pan together with laid aside.
  4. Spoon a niggling chicken fats & stone oil from frying pan to claypot.  
  5. Heat claypot inward medium heat.
  6. Toss onions, lemon grass, ginger, garlic, coriander root into claypot together with stir tiddler till aromatic.
  7. Add 1/2 package of Dancing Chef Hainanese Chicken Rice Paste into claypot together with give it a quick stir fry.
  8. Fold inward mushrooms, napa cabbage together with carrots to stir fry.
  9. Fold inward chicken pieces together with the other one-half package of Dancing Chef Hainanese Chicken Rice Paste to stir tiddler till all ingredients inward claypot are evenly coated alongside aromatic paste. 
  10. Add 500 ml H2O together with cherry-red cutting chili slices to claypot together with convey to boil.
  11. Adjust to depression heat, encompass claypot lid and allow to simmer for fifteen to twenty minutes (subject to pot size).
  12. Add saccharide to taste.
  13. Turn off heat, encompass lid for five minutes. Skim off whatever fats or scums earlier garnish together with serve.
  14. Garnish alongside coriander together with serve whilst hot alongside rice.
