I had a thumbs upwards from my theatre unit of measurement for this Deep Fried Salted Egg Siew Mai 黄金咸蛋味烧卖 is really nice! The salted egg yolk gustation is non predominant inward this dish. It is genuinely subtle but provides enhanced flavouring to the dumplings, making it palatable for people who similar or loathe salted eggs. I added uncomplicated seasonings + Golden Salted Egg Powder, finely chopped curry leaves, coriander, jump onions too shiitake onto minced meat. Instead of the normal steaming, I did a deep fried version.
Ingredients (enough to brand xx to 25 pcs of dumplings) :
- 500 gm of minced pork
- 6 pcs of shitake mushrooms (rinsed, trimmed too finely chopped)
- 20 to 25 pcs curry leaves (finely chopped)
- 1 amount stem of jump onions (finely chopped)
- 1 amount stem of coriander (finely chopped)
- 25 pcs of circular dumpling pastry/skin
- 2 tbsp tobiko (flying fish roe) every bit toppings
- curry leaves too coriander leaves for garnishing
- cooking fossil oil for deep frying
Prep for Golden Salted Egg Seasonings :
- 4 tbsp Knorr Golden Salted Egg Powder
- 4 tbsp tapioca flour
- 1 tbsp salted butter
- 1 tsp sugar
Other Seasonings :
- 1 beaten egg
- 1/2 tsp Knorr Ikan Bilis Powder
- 2 tbsp shaoxing cooking wine
- 1 tbsp sesame oil
(tsp = teaspoon; tbsp = tablespoon)
Method :
- Heat a niggling cooking fossil oil inward pot too lightly stir nipper all aromatics ingredients (i.e. galangal, onions, lemon grass, garlic) inward soup pot at medium heat.
- Fold inward minced pork too finely chopped ingredients (i.e. shitake, curry leaves, jump onions, coriander) into a large bowl.
- Mix previously prepped Golden Salted Egg Powder into beaten egg.
- Add all seasonings including Golden Salted Egg Mixture onto ingredients.
- Mix Ingredients too seasonings good amongst a yoke of chopsticks inward i direction (clockwise or anti-clockwise) till the meat too ingredients piece of job sticky too gluey.
- Cover bowl amongst cling twine too chill for few hours or overnight.
- Get fix to induce amount the dumplings pastry.
- Use a spoon to spread a component of minced pork mix onto each slice of dumpling pastry.
- Then pleat/pinch the edges of the pastry inward a clockwise/anticlockwise direction such that it holds the ingredients too stands firmly inward the tray.
- Heat cooking fossil oil inward saucepan/wok at medium heat.
- Fold inward dumplings/siew mai into hot cooking fossil oil too permit to deep nipper for three to iv minutes. Ensure dumplings/siew mai are fully submerged into hot cooking oil.
- Deep nipper at medium oestrus to permit the insides to last fully cooked.
- Remove dumplings/siew mai from hot cooking fossil oil too teach out to cool on a plate lined amongst newspaper towel.
- Plate the dumplings/siew mai too garnish amongst tobiko, coriander leaves too curry leaves on transcend of each dumpling. Sprinkle a niggling dust of Knorr Golden Salted Egg Powder for visual too gustation enhancements.
- Serve whilst hot too crispy.
