My Oven Baked Aquarium 我的烘烤水族馆



I was cooking whole fish again. However, non the typical Asian style. My Oven Baked Aquarium 我的烘烤水族馆 is somewhat identical to the Rosemary & Lemon Baked Fish 迷迭香柠檬烤鱼 that I posted inward 2015. Whilst that dish was to a greater extent than westernised, I would produce got a to a greater extent than fusion approach this time, beingness to a greater extent than generous amongst garlic, onions, ginger together with mirin but not using soy sauce. To me, this is a fusion of due east meets west.

Unlike deep frying, the success of a steamed or baked fish dish is really much dependent on the freshness of the fish/fishes. I was serving a tabular array for iv adults today. I would prefer to purpose Sea Bass or Barramundi (金目鲈). From my yesteryear experiences, Barramundi could live on cooked perfectly or near to perfection inward an oven. Ingredients (enough for iv pax) :

  • 1 or two whole fish of your selection (I prefer Sea Bass/Barramundi)
  • 1 carrot (thinly sliced together with cutting to blossom shapes yesteryear cookie cutter)
  • 300 gm broccoli (stir tike separately amongst 1 clove of garlic)
  • 4 pocket-sized sprigs of rosemary (leave two sprigs for garnishing)
  • 1 lime (deseed)
  • 7 cloves garlic (peeled together with thinly sliced)(use 1 clove to stir tike broccoli)
  • 2 medium sized onions (peeled together with sliced)
  • 5 slices ginger
  • 1/2 loving cup mirin (to taste)
  • salt (to taste)
  • 1-2 tsp carbohydrate (to taste)
  • 1 tsp fish sauce (to taste)
  • 1-2 cups H2O (subject to size of your roaster/baking pan)
  • 2 tbsp pre-cooked cooking oil

(tsp = teaspoon; tbsp = tablespoon)    


Tip 1 : Fish must live on fresh.
Tip 2 : Blend 50% of aromatic ingredients for a to a greater extent than intense flavour.


Method : 
  1. Clean, descale together with cutting the fish/fishes inward butterfly mode together with hence that it/they could stand upwards on the stomach.
  2. Rub a piddling ocean tabular array salt on the trunk of the fish/fishes if yous prefer. This footstep is optional.
  3. Pre-heat oven to 170 degrees celsius or 338 degrees fahrenheit.
  4. Add 50% of onions, garlic, ginger, rosemary leaves into blender.
  5. Add deseeded lime, 1-2 cups water, 1/4 tsp salt, 1-2 tsp sugar, 1 tsp fish sauce into blender.
  6. Blend all ingredients together with laid upwards aside.
  7. Toss inward chopped carrots together with the other 50% of chopped onions, garlic, ginger into roaster/roasting pan.
  8. Line fish/fishes onto roaster/roasting pan.
  9. Slowly pour the blended mixture over the fish/fishes.
  10. Slowly pour 1/2 loving cup mirin over the fish/fishes.
  11. Use a spoon to drizzle two tbsp pre-cooked fossil oil onto the fish/fishes. This procedure would attention to conjoin all flavours together when the dish is cooked.
  12. Cover lid or amongst a spell of foil over the reach of roaster/roasting pan.
  13. Bake for 25 to xxx minutes (take greenback that bake fourth dimension is dependent on size of fish/fishes)
  14. Stir tike broccoli amongst a piddling chopped garlic together with tabular array salt separately. Put aside when cooked.
  15. Remove fish/fishes from oven when time's up.

As expected, the Barramundi turned out to live on a lot to a greater extent than tender than the golden pomfret. Everyone loved the Barramundi. We loved the sweetness freshness from the fish, the onions together with the carrot. My Oven Baked Aquarium 我的烘烤水族馆 certainly hitting a dwelling run amongst my family. I exclusively wished I had to a greater extent than than ane Barramundi!
